I have been experiencing this for some time but never really bother to find the solution. Sometimes it does not happen when I pause the video and then go full screen. But not always. I looked up on the internet and found various different explanations….Some forums have weird suggestions like installing add-ons, scripts etc…

On one site it was mentioned that this happens because when you go full screen YouTube video resolution changes from 320p to 480p. And I found it is the cause. The resolution was 360p and then it changed to 480p on full screen.
But when I tried on various other videos, it’s not always the case. Some videos play at 480p on normal as well as full screen. Some play at 360p on both. So that I think depends on the resolution of the video available.
So far from the videos I experimented, I realize that if the setting discussed above is not applied, then Youtube switches from 360p to 480p if a high resolution video playback is available; and so during this switch the reset happens.
No matter what the resolution, after doing the change in PLAYBACK SETUP, the butter restart never happened (as far as I tried). So cheers!
